Hello lovelies! I can’t believe it’s the end of another month AND we’re halfway through the year; everyone says this, but I’ll say it too: where has the time gone??
Anyways, today I wanted to show you a recipe for a quick and light dinner I made last week that could also work as a lunch. On this day, I just felt like eating a sandwich for dinner instead of creating a large meal that would make me too full so I made this.
1. Two slices of toasted whole wheat bread
2. Half of an avocado
3. Sliced cucumber
4. Sliced tomato
6. Salt, pepper, and sugar to taste
Start by toasting your bread. Taking half an avocado, mash it up with a fork and add salt, pepper, and sugar to taste. I like adding a tiny bit of sugar because it adds a hint of sweetness that I personally enjoy.
Add your cucumber slices.
Top it off with the other slice of bread. I had leftover cucumber because I only needed half, so I just cut up the rest of it as well.
You can add whatever you want on the side or eat it as is. For a drink, I like to have a glass of water or a cup of tea.
And that’s it! I know it’s a super simple meal, but I think these days we get so caught up in trying to make the most complicated gourmet meals that we forget about the quick easy meals that can look and taste just as great. I’m certainly no chef so it’s good to fall back on the basics sometimes and make food like this.
Sandwiches are underestimated anyways; you can create so many different tasting ones just by changing the bread and ingredients inside of it.
